It comes from sopaipa in Spanish, which is "bread soaked with oil". Sopapilla sounds much more fancy. This is a popular dish in New Mexico, and it goes well with all Mexican-inspired dishes.

This recipe uses crescent rolls instead of the traditional fried dough. It's easier, cleaner and... healthier? You can read more about that below.

Is Sopapilla Cheesecake Healthy?

In a single word, the answer is no. Here, the sugar is to blame. You can replace 3/4 cup of the sugar with maple syrup, as I have suggested below. It will not be a drastic change in flavor (you might even prefer it). Low-fat cream cheese is helpful, but along with butter it contains saturated fats. The dough also contains carbs that should be restricted in your diet.

This is a sweet. This is a sweet reward for completing your healthy dinner (or whatever else you did that day). If you don't eat this cheesecake instead of your healthy meal, it won't ruin your diet. Enjoy yourself, but don't overindulge.

Ingredients

All of these ingredients, except for the cream cheese should be found in the baking section at your local grocery store.

  • Two cans of crescent roll dough
  • 2 (8-oz) Sticks of Low-Fat Cream Cheese, Room temperature
  • divide 1 cup of white sugar into
  • 1 tsp vanilla essence
  • 1/4 cup butter, melted
  • 1 tsp of cinnamon

Instrucciones

Prep

Heat your oven to 350degF and grease a baking dish measuring 9"x13". Place one of the crescent rolls in the baking dish. If you're using a smaller baking dish, simply cut the sheet into the correct size.

Blend

Blend the cream cheese with 3/4 cup sugar and the vanilla essence using an electric mixer until smooth.

Spread

Spread it out evenly to cover the entire dish.

Layer

Spread the cream cheese mixture on the second crescent roll. Pour the melted Butter over the dough.

Mix

Sprinkle the cinnamon and sugar mixture on top.

Bake

Bake for 25-30 mins until bubbly. Let cool.

  • Add some fruit to the cream cheese (e.g. strawberries or pineapple crushed and drained).
  • You can use puff pastry if you don't have or prefer crescent roll dough.
  • Instead of 3/4 cup sugar, you could sweeten cream cheese with 1/4 cup maple syrup.

Allow your cream cheese to soften for 30 minutes at room temperature before using. The cream cheese will be too firm when it comes out of the refrigerator.

Yes, you can. Let it cool down for a couple of minutes so the cheese can set.

Can I make my own dough instead of using canned?

You can certainly make your own dough. The traditional sopapilla is made with flour, baking powder, salt and water. Sugar is often added to flavor the sopapilla dough.

How to store Sopapilla Cheesecake

If you have already eaten some cheesecake, but cannot finish it or if you made it days before serving, this is how you can keep it fresh.

Let it cool down completely. You can store it either in an airtight jar (make sure the container is large enough to prevent the lid from squishing the cheesecake), or you can cover it with aluminum or plastic wrap. The cheesecake can be kept in the refrigerator for up to 5 days. Wrap the cheesecake in aluminum or plastic and store it in an airtight container. The cheesecake should last up to three month in the freezer. When you are ready to enjoy the treat, let it thaw in the refrigerator overnight.
